Spinach Dipping Sauce
Dipping Sauces
Makes 1 1/2 cups

Ingredients
- 1 cup non-fat plain yogurt (without gelatin)
- 1 10-ounce package frozen chopped spinach, thawed
- 1/2 ounce Parmesan Reggiano cheese
- 2 cloves garlic, peeled
- 8 chives cut into 1-inch lengths
- 1/2 cup well-packed flat parsley leaves
- 1/4 cup extra virgin olive oil
- 4 to 6 drops Tabasco
- 4 tablespoons water
Directions
Drain the Yogurt
Strain yogurt overnight in a yogurt strainer or cheesecloth-lined strainer; discard whey.Prepare the Spinach
Squeeze thawed spinach dry in a clean tea towel and reserve.Blend
Blend cheese and garlic to chop. Add chives, parsley, drained yogurt, and spinach; blend to combine.Finish the Sauce
With blender running, add olive oil in a steady stream. Add hot sauce and water and blend. Add more water a little at a time if a thinner sauce is desired. Serving / Recipe Note Use for steamed vegetables or as a spread on steamed chicken or seafood.
