Southwest Salsa Fondue

Cheese Fondues
Makes 8 servings

Ingredients

  • 3/4 cup thick prepared salsa
  • 3/4 pound sharp Cheddar cheese, shredded
  • 3/4 pound Monterey Jack cheese, shredded
  • 3 tablespoons cornstarch
  • 1/2 teaspoon ground cumin
  • 1 clove garlic, cut in half
  • 2 12-ounce Mexican beers
  • 3 tablespoons tequila

Directions

  1. Coat the Cheese

    Combine the shredded cheeses with the cornstarch and cumin, tossing until the shreds are evenly coated.
  2. Warm the Beer

    Rub the cut garlic over the inside of the fondue pot. Add 2 1/4 cups of beer and heat until it begins to bubble.
  3. Melt the Cheese

    Reduce the heat and whisk in the cheese a handful at a time. Let each addition melt completely before adding the next.
  4. Finish and Serve

    Stir in the drained salsa and tequila after the cheese is smooth. Keep the fondue warm over low heat and serve with cooked smoked sausage, bread cubes, tortilla chips, or fresh vegetables.
