Dutch Oven Mexican Beef

Ingredients
- 7 — 8 lbs Beef Chuck Roast
- 3 Tbsp Olive Oil
- 1 lb Hatch chiles, roasted, peeled & seeded
- 6 cloves garlic, minced
- 2 Tbsp Chili Powder
- 1 Tbsp Dried Oregano
- 1 Tbsp Dried Cumin
- Sea salt and freshly cracked black pepper, to taste
Directions
Preheat the Oven
• Preheat oven to 300°F.Sear the Chuck Roast
Sear both sides of the chuck roast in olive oil in a skillet or on the grill for 5 minutes per side.Season the Roast
• Sprinkle chili powder, oregano, and cumin evenly over the chuck roast.Layer in the Dutch Oven
• Place the roasts in the Dutch oven, layering the chiles and garlic.Slow-Roast the Beef
• Cook in the Dutch oven for about 5 hours, until the internal temperature reaches 200°F.Serve as Desired
Serve in tacos, tostadas, burritos, or nachos.
