Daikon Kimchi

Ingredients
- 2 tablespoons pickling salt
- 2 tablespoons sugar
- 4 pounds daikon, chopped into 1/2-inch cubes
- 6 green onions, coarsely chopped
- 2 tablespoons garlic powder
- 1 tablespoon ginger
- 2/3 cup red pepper flakes
- 1/4 cup soy sauce
Directions
Salt the Daikon
Mix daikon, sugar, and salt in a bowl.Rest
Let sit at room temperature for 2 hours.Season
Combine remaining ingredients with the daikon mixture.Pack
Pack in glass jars, removing all air bubbles, and ensure all daikon is covered with liquid.Ferment
Fit each jar with a lid equipped with a fermenting valve and let sit at room temperature in a dark space for 5 days.Refrigerate
Refrigerate until ready to use.
